Rancho San Francisco is an exclusive to our trading partner, Vournas, and perhaps one of the most underrated and undervalued coffees in all Central America. The Rancho as we call it is Strictly High Grown (SHG) by third generation farmers, Delmar and Fernando Moreno Guillen on their family estate in the mountains of Chiapas. The farm utilizes a significant amount of natural shade trees, and while not certified organic, it is naturally grown and processed without chemical fertilizers. Our Mexico Rancho San Francisco is comprised of mostly Typica and Bourbon varieties, but there are a few Caturra trees still producing in some areas of the farm.

Overall this is one of the most versatile coffees around as it can be roasted across the spectrum, blended, or enjoyed as solo cup or single origin espresso. The beans are relatively softer than other high grown centrals and develop a bit faster in the roast.

Cupping Notes: Medium body, medium acidity, with notes of vanilla, almond nuttiness and slight hints of peach.

      A very interesting coffee. It has a medium body and is quite low in acidity so I’d recommend a slightly higher dose overall, like 75g/L instead of 60g/L for a pour over. Doing so gives strong vanilla bean notes while hot and as it cooled down it developed more of a soft sugar cookie aroma, even having roasted it quite poorly myself (I’m still new at this.)

      This is a really good, no-fuss coffee. Roasts well, and the taste is spot on with the cupping notes listed in the write up. In my uses it really shines in pour over form. I’ve used it as part of a blend, and as a solo offering, and it’s been worth the purchase.
